Ingredients

  • 1/4 cup tart cherry juice
  • 1/4 cup water
  • 1/2 cup dried tart cherries
  • 1 tbsp coconut oil
  • 1/2 yellow onion
  • 2 slices deli ham
  • 2 lb green beans
  • 1/4 cup crumbled feta cheese
  • salt and pepper

Steps

  1. Soak the dried cherries in the cherry juice and water for 15 minutes.
  2. Trim the green beans and cut the onion and ham into small pieces.
  3. Stir the coconut oil, salt, and pepper into the cherry mixture.
  4. Toss the green beans, onion, ham, feta, and dressing in a large bowl.
  5. Chill the salad for 10 minutes before serving.
