Ingredients

  • 6 large potatoes
  • 8 stems shallot/green onion
  • 1 tbsp olive oil
  • 6 large ripe tomatoes
  • 2 cups shredded mozzarella cheese
  • 1 pinch salt

Steps

  1. Heat the oven to 425 F and brush a 9-by-13-inch baking dish with the olive oil.
  2. Slice the potatoes thinly, arrange them in the dish, and sprinkle with salt.
  3. Bake the potatoes for 15 minutes, until they begin to soften.
