Ingredients
- 10 white or red potatoes
- 1 1/2 cup shredded mild cheddar cheese
- 1/2 cup diced green or red bell pepper
- 1/2 cup diced yellow onion
- 1/2 tsp kosher salt
- 1/2 tsp coarsely ground black pepper
Steps
- Heat the oven to 425 F and grease a 9-by-13-inch baking dish with cooking oil.
- Slice the potatoes thinly and layer them in the dish with the bell pepper and onion.
- Season the layers with salt and pepper, then cover the dish with foil.
- Bake for 25 minutes, then remove the foil and sprinkle the cheddar over the potatoes.
- Bake for 10 minutes more, until the potatoes are tender and the cheese is melted.
