Ingredients

  • 2 cups grated carrots
  • 1 3/4 cup all purpose flour
  • 1 cup 2 sticks softened unsalted butter
  • 1 cup light brown sugar
  • 3 large eggs
  • 1 cans (8 oz) crushed pineapple
  • 3 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp kosher salt
  • 1 packages (8 oz) softened cream cheese
  • 1 cup powdered sugar
  • 1/4 cup plain greek yogurt
  • 1 tbsp lemon juice

Steps

  1. Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
  2. Beat the softened butter and brown sugar until smooth, then beat in the eggs and vanilla.
  3. Stir in the flour, baking powder, cinnamon, ginger, and salt, then fold in the carrots and pineapple.
  4. Spread the batter in the pan and bake for 35 to 40 minutes, until a toothpick comes out clean.
  5. Cool the cake completely for about 10 minutes, then beat the cream cheese, powdered sugar, yogurt, and lemon juice until smooth.
  6. Spread the frosting over the cooled cake and cut it into pieces.
