Ingredients

2 bags (3 1/2 oz) microwave popcorn
1/2 cup butter
1 cup packed dark brown sugar
1/4 cup light corn syrup
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp vanilla
1 1/2 cup nuts (optional)

Steps

Pop both bags of popcorn according to their package directions and remove any unpopped kernels.
Heat the oven to 250 F and spread the popcorn and nuts in a large roasting pan.
Boil the butter, brown sugar, corn syrup, and salt in a saucepan for 3 minutes.
Remove the caramel from the heat and stir in the baking soda and vanilla.
Pour the caramel over the popcorn and toss until evenly coated.
Bake for 60 minutes, stirring every 15 minutes, then cool for 10 minutes.
