Ingredients

  • 1 tbsp olive oil
  • 1/2 yellow onion
  • 1 clove garlic
  • 8 oz potato
  • 2 cup low sodium chicken stock
  • 1 cup water
  • 8 oz kale
  • salt and pepper (optional)
  • 1 few drops of white or cider vinegar on the bowls to serve

Steps

  1. Heat the olive oil in a 4-quart pot over medium heat.
  2. Cook the chorizo and onion for 5 minutes, stirring often.
  3. Add the garlic and potatoes, and cook for 2 minutes.
  4. Pour in the chicken stock and water, then simmer for 25 minutes.
  5. Stir in the kale and simmer for 8 minutes, until tender.
  6. Season with salt and pepper, then stir a few drops of vinegar into each bowl.
