Ingredients

  • 3 tbsp packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 lb lean ground beef
  • 1 cup low-fat milk
  • 2 eggs
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 small onion
  • 1/4 tsp ground ginger
  • 1 cup whole wheat bread crumbs
  • 1/4 cup chopped parsley

Steps

  1. Heat the oven to 350°F.
  2. Stir the brown sugar and ketchup together in a small bowl.
  3. Mix the beef, milk, eggs, onion, breadcrumbs, parsley, salt, pepper, and ginger in a large bowl.
  4. Press the meat mixture into a 9-by-5-inch loaf pan and spread the ketchup mixture over it.
  5. Bake for 60 minutes, until the center reaches 160°F.
  6. Rest the meatloaf for 5 minutes before slicing.
