Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup light brown sugar
  • 2 tbsp light corn syrup
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground ginger
  • 1 pinch salt
  • 1/2 tsp vanilla extract or paste
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract or paste

Steps

  1. Heat the oven to 350 F and line a baking sheet with parchment.
  2. Melt the butter, brown sugar, and corn syrup in a small saucepan over low heat.
  3. Stir in the flour, ginger, salt, and vanilla until smooth, then rest the mixture for 5 minutes.
  4. Drop teaspoons of batter onto the sheet, leaving 3 inches between portions, and bake for 8 minutes.
  5. Shape each hot cookie around a spoon handle, then cool it for 5 minutes.
  6. Whip the cream, powdered sugar, and vanilla until firm, then pipe it into the cooled snaps.
