4 large potatoes

100 g plain flour
1 egg white
150 ml milk
1 tsp bicarbonate of soda
3 tbsp butter
2 tbsp vegetable oil

Steps

Boil two potatoes in salted water for 15 minutes, then drain and mash them.
Grate the remaining potatoes and squeeze out excess moisture.
Stir the grated potatoes, mashed potatoes, flour, egg white, milk, bicarbonate of soda, and salt together.
Cook the bacon in a skillet over medium heat for 8 minutes, then keep it warm.
Fry the potato batter in butter and oil over medium heat for 10 minutes, turning once, until browned and cooked through.
Cook the tomatoes for 3 minutes, then fry the six eggs until their whites and yolks are firm.
