Ingredients
- 2 cups dried black-eyed peas or brown beans
- 3 1/2 fresh scotch bonnet chili peppers
- 1 onion
- seasoning cubes
- salt
- groundnut oil or palm oil for deep frying
Steps
- Cover the dried peas with water in a large bowl and soak them for 15 minutes.
- Drain the peas, then blend them with the chilies, onion, seasoning cubes, salt, and enough water to make a thick batter.
- Heat 2 inches of groundnut or palm oil to 350 F in a deep, heavy 4-quart pot.
- Drop rounded spoonfuls of batter into the oil and fry for 3 to 4 minutes per side.
- Drain the bean balls on a plate and repeat with the remaining batter.
