Ingredients

  • 3 ancho peppers
  • 3 guajillo peppers
  • 2 tbsp vegetable oil
  • 1 lb ground beef
  • salt to taste (optional)
  • 1/4 tsp ground pepper
  • 1/4 a medium-size white onion
  • 2 small garlic cloves
  • 1 cup potatoes
  • 1 cup carrots
  • 9 oz lard
  • 3 1/2 cups masa harina for tortillas
  • 3 cups chicken broth
  • 20 corn husks

Steps

  1. Soak the corn husks in hot water for 20 minutes, then drain them.
  2. Remove the stems and seeds from the ancho and guajillo peppers, simmer them in water for 10 minutes, and blend them with the garlic and onion.
  3. Heat the oil in a skillet, cook the ground beef for 8 minutes, then add the chile mixture, pepper, potatoes, and carrots.
  4. Simmer the filling for 12 minutes, until the beef reaches 160 F and the vegetables soften.
  5. Beat the lard until smooth, then mix in the masa harina, broth, and salt to make a spreadable dough.
  6. Spread masa on 20 husks, add filling, fold the husks, and arrange the tamales upright in a steamer.
  7. Steam covered for 40 minutes, until the masa pulls cleanly from the husks.
