Ingredients
- 3/4 cup + 2 tablespoons sugar
- 1/4 cup + 2 tablespoons cornstarch
- 1/2 tsp salt
- 6 egg yolks
- 3 1/2 cups whole milk
- 2 tbsp unsalted butter
- 1 tbsp + 1 teaspoon vanilla extract
- 1 1/2 tbsp dark rum
- 3/4 cup heavy cream
- 2 tbsp confectioners' sugar
- 2 boxes (5 2/7 oz) walkers pure butter shortbread cookies
Steps
- Whisk the sugar, cornstarch, salt, egg yolks, and milk in a medium saucepan until smooth.
- Cook the custard over medium heat for 8 to 10 minutes, whisking, until thick and the eggs reach 160 F.
- Remove the pan from the heat and stir in the butter, vanilla, and rum.
- Cover the custard and chill it for 2 hours, then whip the cream with the confectioners' sugar until firm.
- Layer custard, banana slices, whipped cream, and broken cookies in six glasses.
- Chill the assembled parfaits for 1 hour before serving.
