Ingredients

2 oz cornstarch
1 quart milk
2 oz caster sugar
2 egg yolks
1/2 tsp vanilla extract
2 bananas

Steps

Slice the bananas and place them in a serving bowl.
Whisk the cornstarch, sugar, and a little milk in a saucepan until smooth.
Whisk in the remaining milk and cook over medium heat for 6 minutes, stirring until thick.
Whisk the egg yolks with a spoonful of hot pudding, then stir them into the saucepan.
Cook the pudding for 2 minutes, stirring constantly, until it reaches 160 F.
Stir in the vanilla and pour the pudding over the bananas.
Cool for 10 minutes, then chill for 20 minutes.
