1 tbsp sunflower oil
1 small onion chopped
8 spring onions sliced
400 g new potatoes peeled and halved
1 l vegetable stock
500 g sweetcorn kernels
200 ml milk
small bunch of chives chopped

Steps

Heat the sunflower oil in a large pot over medium heat.
Cook the onion and spring onions for 5 minutes until softened.
Add the potatoes and vegetable stock, then simmer for 15 minutes until the potatoes are tender.
Stir in the corn and milk, and simmer gently for 8 minutes without boiling.
Mash some potatoes against the pot to thicken the chowder, then stir in the chives.
