Ingredients
- 1/2 tbsp vegetable oil
- 12 1/3 oz firm tofu
- 2 tbsp greek seasoning mix
- 3/4 tsp salt
- 4 cup frozen spinach
- 2 tbsp chickpea flour
- 1/4 cup water
- 8 square sheet of filo pastry
- 2 tbsp unsalted vegan butter
- 3 7/8 oz vegan feta
Steps
- Heat the oven to 375 F and oil a 9-inch square baking pan.
- Cook the frozen spinach in a skillet over medium heat for 6 to 8 minutes, then press out excess water.
- Crumble the tofu into a bowl and mix it with the spinach, Greek seasoning, salt, chickpea flour, and water.
- Stir in the vegan feta and divide the filling across the filo sheets.
- Fold the filo around the filling, place the parcels in the pan, and brush them with melted vegan butter.
- Bake for 25 to 30 minutes, until golden and crisp, then cool for 5 minutes.
