2 tbsp white wine vinegar

2 tsp lemon juice

3 yolkes egg
125 g unsalted butter

Steps

Melt the butter in a small saucepan over low heat and keep it warm.
Whisk the three egg yolks, lemon juice, and 2 teaspoons vinegar in a heatproof bowl over simmering water until thickened to 160 F.
Slowly whisk in the warm butter until the sauce is smooth, then keep it warm over low heat.
Bring a wide pan of water and the 2 tablespoons vinegar to a gentle simmer.
