The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 lb sweet italian ground sausage
  • 1 yellow onion
  • 4 cloves garlic
  • 1 tbsp tomato paste
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 whole peeled san marzano tomatoes
  • 1 tsp dried oregano
  • 2 sprigs fresh basil leaves (optional)
  • 16 oz ziti pasta
  • 2 cups whole-milk ricotta cheese
  • 1/2 cup freshly grated parmesan cheese
  • 1 1/2 cups shredded mozzarella or provolone cheese

Steps

  1. Heat the oven to 375 F and cook the ziti in salted water until just tender, about 8 minutes.
  2. Heat the olive oil in a large skillet over medium heat, then cook the onion and garlic for 4 minutes.
  3. Add the sausage and cook for 8 minutes, breaking it apart, until it reaches 160 F.
  4. Stir in the tomato paste, tomatoes, salt, pepper, oregano, and basil, then simmer for 10 minutes.
  5. Mix the drained ziti with the tomato sauce and spread half in a greased 9-by-13-inch baking dish.
  6. Dollop with ricotta, sprinkle with parmesan, add the remaining pasta, and top with mozzarella before baking for 25 minutes.
