Ingredients
- 1 scant cup flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 pinch salt
- 1 tbsp cocoa powder
- 1/3 cup sugar
- 1/2 cup milk
- 2 tbsp strong coffee
- 3 1/2 tbsp vegetable oil
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup chocolate chips
- sea salt
- 1/2 cup powdered sugar
- 1 tbsp cocoa powder
- 1 tbsp milk
Steps
- Heat the oven to 375 F and grease eight muffin cups.
- Whisk the flour, baking powder, baking soda, salt, cocoa powder, and sugar in a bowl.
- Stir in the milk, coffee, oil, egg, and vanilla until just combined, then fold in the chocolate chips.
- Divide the batter among the cups and bake for 14 to 16 minutes, until a toothpick comes out mostly clean.
- Whisk the powdered sugar, cocoa powder, and milk, drizzle the glaze over the warm muffins, and sprinkle with sea salt.
