3 tbsp extra virgin olive oi
salt & pepper
1/2 tbsp rosemary + more for garnish (optional)
1/4 tsp cayenne pepper

Steps

Heat the oven to 425 F and coat a large baking sheet with oil.
Cut the potatoes into thin fries and soak them in water for 10 minutes.
Drain and dry the fries, then toss them with rosemary, cayenne, paprika, cumin, salt, and pepper.
Spread the fries in one layer on the baking sheet and bake for 30 minutes, turning once.
Bake for 5 more minutes, until the fries are crisp and golden.
