2 cans (14 1/2 oz) full fat coconut milk
1/3 cup honey
1/2 tbsp vanilla extract
1/2 vanilla bean
1 cup chopped strawberries
1 tbsp mint

Steps

Heat the oven to 400 F and roast the chopped strawberries in a small baking dish for 15 minutes.
Warm the coconut milk, honey, vanilla extract, and split vanilla bean in a medium saucepan over medium heat for 5 minutes.
Remove the vanilla bean, stir in the roasted strawberries and mint, and cool the mixture for 20 minutes.
Chill the mixture in the refrigerator for 45 minutes.
Churn the chilled mixture in an ice cream maker until thick, about 25 minutes.
