Ingredients
- 4 2 inch thick pork chops
- 1 cup boiling water
- 1/4 cup kosher salt
- 1/2 cup cooking molasses
- 1/2 cup brown sugar
- 3 cups cold water
- 2 tbsp apple cider vinegar
- 1 tbsp minced garlic
- 1 tsp onion powder
- 4 whole cloves
Steps
- Stir the boiling water, kosher salt, molasses, brown sugar, garlic, onion powder, and cloves in a large bowl until dissolved.
- Stir in the cold water and apple cider vinegar, then chill the brine until cold.
- Place the pork chops in a large sealed container and pour the cold brine over them.
- Refrigerate the pork chops in the brine for 4 hours.
- Cook pork until it reaches 145 F inside, then rest it 3 minutes.
- Remove the pork chops from the brine and pat them dry before cooking.
