Ingredients
- 1 cup water
- 1 tbsp lard
- 2 lb pork shoulder
- 2 organic oranges
- 1 cinnamon stick
- 1 tbsp oregano
- 1 tsp salt
- 1/2 large yellow onion
- 4 cloves garlic
Steps
- Cut the pork shoulder into 2-inch pieces.
- Heat the lard in a large heavy pot over medium heat.
- Add the pork, water, orange juice, onion, garlic, cinnamon stick, oregano, and salt.
- Cover and simmer over low heat for 1 hour and 45 minutes.
- Remove the lid and cook for 15 minutes, turning occasionally, until browned and at least 145 F inside.
