Ingredients

  • 2 tbsp vegetable oil
  • 2 cups peeled & diced potatoes
  • 1/3 cup diced white onion
  • 1 serrano pepper or jalapeño pepper
  • 2 roma tomatoes diced
  • salt to taste (optional)

Steps

  1. Heat the oil in a large skillet over medium heat.
  2. Add the potatoes and cook for 8 minutes, stirring often.
  3. Stir in the onion and pepper, then cook for 5 minutes.
  4. Add the tomatoes, salt, and water, then cover the skillet.
  5. Simmer for 7 minutes until the potatoes are tender.
  6. Uncover and cook for 3 minutes until excess liquid evaporates.
