Steps

Beat the egg whites and cream of tartar in a large bowl until soft peaks form, about 5 minutes.
Heat the corn syrup, water, and sugar in a saucepan over medium heat until the syrup reaches 240 F, about 10 minutes.
Slowly pour the hot syrup into the whites while beating constantly.
