3 1/2 lb sweet potatoes
1 head garlic
2 tbsp olive oil
1 tbsp maple syrup
1 tsp sea salt
1/2 tsp black pepper
4 oz bacon

Steps

Heat the oven to 425 F and cut the sweet potatoes into 1-inch pieces.
Separate the garlic head into cloves, leaving the cloves unpeeled, and place them with the potatoes on a large baking sheet.
Toss the potatoes and garlic with olive oil, maple syrup, salt, and pepper.
Roast for 30 minutes, turning the potatoes halfway through.
Add the bacon pieces and roast for 10 to 15 minutes more, until the potatoes are tender and the bacon is crisp.
