The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.
Ingredients
- 5 tbsp canola oil
- 1/4 cup all-purpose flour
- 1 tsp kosher salt
- 1 tsp freshly ground pepper
- 1 lb skinless and boneless chicken breasts
- 4 carrots
- 2 ribs celery
- 1 onion
- 1 leek
- 2 cloves garlic
- 1 cup orzo pasta
- 5 cups chicken stock
- 1 cup water
- 3 tbsp lemon juice (optional)
- 2 tbsp fresh tarragon
Steps
- Season the flour with salt and pepper, coat the chicken, and brown it in 3 tablespoons oil in a 6-quart pot over medium heat for 3 minutes per side.
- Transfer the chicken to a plate, add the remaining oil, and cook the carrots, celery, onion, leek, and garlic for 6 minutes.
- Stir in the orzo and chicken stock, then return the chicken to the pot and bring the mixture to a boil.
- Cover the pot, reduce the heat, and simmer for 15 minutes until the orzo is tender and the chicken reaches 165 F.
- Remove the chicken, cut it into pieces, and return it to the stew with the lemon juice and tarragon.
- Simmer uncovered for 2 minutes, adding the water if the stew becomes too thick.
