Ingredients

  • 2 large eggs
  • 1 1/4 cups sugar
  • 1/2 cup freshly squeezed lemon juice
  • 4 tbsp unsalted butter
  • 1 cup whipping cream
  • 5 cups assorted fresh berries
  • 1 few springs fresh mint (optional)
  • 5 shortbread or ginger cookies (optional)

Steps

  1. Whip the cream with the sugar and lemon zest in a large bowl until soft peaks form.
  2. Whisk in the lemon juice slowly until the cream thickens.
  3. Layer the lemon cream and berries in four glasses, adding cookies or mint if desired.
  4. Chill the parfaits for 45 minutes before serving.
