Ingredients

  • 100 g unsalted butter
  • 125 g icing sugar
  • 25 g flour
  • 85 g almonds
  • 3 egg white
  • 1 unwaxed lemon
  • 85 g blackberries

Steps

  1. Heat the oven to 375 F and grease a 12-cup muffin pan with butter.
  2. Melt the butter and let it cool slightly.
  3. Whisk the icing sugar, flour, and almonds in a bowl.
  4. Whisk in the egg whites, lemon zest, and melted butter until smooth.
  5. Divide the batter among the cups and press the blackberries into the batter.
  6. Bake for 18 to 22 minutes until golden and set in the centers.
  7. Cool the friands in the pan for 10 minutes before removing them.
