Ingredients

1/2 cup water
1/2 cup whole milk
8 tbsp unsalted butter
1 tsp granulated sugar
1/4 tsp salt
1 cup all-purpose flour
4 large eggs
oil for frying (optional)
1/4 cup confectioners sugar

Steps

Bring the water, milk, butter, sugar, and salt to a boil in a medium saucepan.
Remove the pan from the heat, stir in the flour, and cook the dough over medium heat for 2 minutes.
Cool the dough for 5 minutes, then beat in the eggs one at a time until smooth.
Heat 2 inches of oil to 350 F in a deep, heavy pot.
Drop rounded tablespoons of dough into the oil and fry for 3 to 4 minutes, turning until golden and cooked through.
Drain the zeppole on paper towels and dust them with confectioners sugar.
