1 eggplant
3/4 cup grated parmesan
1/2 cup plain breadcrumbs
1/2 cup panko breadcrumbs

Steps

Heat the oven to 425 F and line a large baking sheet with cooking oil.
Cut the eggplant into thick sticks.
Mix the parmesan, breadcrumbs, panko, salt, garlic powder, onion powder, basil, and parsley in a shallow bowl.
Beat the egg white in a second bowl.
Dip each eggplant stick in egg white, coat it with the crumb mixture, and place it on the baking sheet.
