1 cup jasmine rice
1 tbsp vegetable oil or unsalted butter
3 cloves garlic
1/2 tsp fine sea salt or table salt
1 cup cold water or unsalted chicken stock
1 1/2 tbsp lime juice
1 lime
15 g fresh cilantro

Steps

Rinse the rice under cold water until the water runs mostly clear.
Set the Instant Pot to sauté, heat the oil, and cook the minced garlic for 30 seconds.
Add the rice, water, and salt, then seal the pot and cook on high pressure for 4 minutes.
Let the pressure release naturally for 10 minutes, then release any remaining pressure and fluff the rice.
Stir in the lime juice, finely chopped cilantro, and the zest and juice from the lime.
