Ingredients
- 2 tsp cornstarch
- 1 tbsp cold water
- 3 tsp olive oil
- 1 lb boneless skinless chicken breasts
- 1 clove garlic
- 3 tbsp honey
- 2 tbsp reduced-sodium soy sauce
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 package (16 oz) frozen broccoli stir-fry vegetable blend
- hot cooked rice (optional)
Steps
- Cut the chicken into bite-size pieces and season it with salt and pepper.
- Stir the cornstarch and cold water together in a small bowl until smooth.
- Heat 2 teaspoons of oil in a large skillet over medium-high heat, then cook the chicken for 7 to 9 minutes until it reaches 165 F.
- Add the remaining oil, garlic, and frozen vegetables, then stir-fry for 6 to 8 minutes until hot and tender.
- Stir in the honey and soy sauce, then add the cornstarch mixture and cook for 2 minutes until thickened.
- Serve the stir-fry over hot cooked rice if using.
