Ingredients

  • 3 oz semi sweet chocolate
  • 1 1/2 cups hot brewed coffee
  • 3 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups unsweetened cocoa powder
  • 2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 1/4 tsp salt
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 1/2 cups buttermilk
  • 3/4 tsp vanilla

Steps

  1. Heat the oven to 350 F and line a 12-cup muffin pan with paper liners.
  2. Pour the hot coffee over the chocolate and stir until smooth.
  3. Whisk the sugar, flour, cocoa, baking soda, baking powder, and salt in a large bowl.
  4. Beat in the eggs, oil, buttermilk, vanilla, and chocolate coffee mixture until just combined.
  5. Divide the batter among the liners and bake for 18 to 20 minutes, until a tester comes out clean.
  6. Cool the cupcakes in the pan for 5 minutes, then transfer them to a rack.
