2 eggs
2 tbsp butter
1 1/2 tbsp sugar
1 1/4 cup gluten-free flour blend
1 1/2 tsp matcha powder
1 heaping cup milk
1/2 tsp pure vanilla extract

Steps

Melt 1 tablespoon butter in a small pan over low heat, then cool it slightly.
Whisk the eggs, sugar, flour, matcha, milk, vanilla, and melted butter in a bowl until smooth.
Heat a 8-inch nonstick skillet over medium heat and brush it with some remaining butter.
