Ingredients
- 2 lb small russet potatoes
- 1 egg
- 1 5/8 cup unbleached all-purpose flour
- 1 tsp olive oil
- 1 onion
- 2 cup peas
- 1 cup basil pesto
Steps
- Heat the oven to 400 F and bake the potatoes for 50 minutes, until tender.
- Cool the potatoes for 15 minutes, peel them, and mash them until smooth.
- Mix in the egg and flour to form a soft dough, then cut it into small gnocchi.
- Boil the gnocchi in salted water for 3 to 4 minutes, removing them when they float.
