Ingredients

  • 1 cup soft pitted medjool dates
  • 1 cup roasted and mashed sweet potato
  • 3/4 cup almond butter or natural peanut butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup cacao or cocoa powder
  • 3 tbsp all purpose flour
  • 1 tsp baking powder
  • heaping 1/4 tsp fine sea salt
  • 1/2 cup chocolate chips
  • optional: 1/3 cup chopped walnuts

Steps

  1. Heat the oven to 350 F and lightly oil an 8-inch square pan.
  2. Blend the dates, sweet potato, almond butter, eggs, and vanilla until smooth.
  3. Stir in the cocoa powder, flour, baking powder, and salt until combined.
  4. Fold in the chocolate chips and spread the batter in the pan.
  5. Bake for 23 minutes, then cool for 10 minutes before slicing.
