Ingredients
- 8 oz maraschino cherries in juice
- 3 oz package cherry-flavored gelatin
- 16 oz jellied cranberry sauce
- 3 tbsp lemon juice
- 1 cup heavy cream
- 3 tbsp granlulated sugar
- 1/4 tsp lemon rind
- 1/2 cup mayonnaise
- 1/3 cup pecans
- 1 tbsp lemon juice
Steps
- Stir the gelatin into 1 cup boiling water in a large bowl until dissolved, then mix in the cherries, cranberry sauce, 3 tablespoons lemon juice, and lemon rind.
- Chill the cranberry mixture for 10 minutes, until slightly thickened.
- Whip the heavy cream with the sugar until soft peaks form, then fold in the mayonnaise, pecans, and remaining lemon juice.
- Fold the cream mixture into the cranberry mixture and spread it in a 9-by-13-inch dish.
- Cover and chill for 8 hours 20 minutes, until firm.
