Ingredients
- 1 1/2 cups heavy cream
- 5 tbsp unsalted butter
- 1 cup grated parmesan cheese
- 1/2 cup pecorino cheese
- 1/2 cup asiago cheese
- 1/2 cup romano cheese
- salt & fresh ground pepper
- fresh nutmeg
- 4 oz fresh pancetta
- 4 oz fresh prosciutto
- 1 lb homemade fresh fettuccine
Steps
- Bring a large pot of salted water to a boil, cook the fettuccine for 3 to 4 minutes, and drain.
- Cook the pancetta and prosciutto in a 12-inch skillet over medium heat for 5 minutes.
- Add the butter and heavy cream, then simmer the sauce for 3 minutes.
- Stir in the parmesan, pecorino, asiago, romano, nutmeg, salt, and pepper until smooth.
- Toss the drained pasta with the sauce and cook for 2 minutes, adding a little water if needed.
