Ingredients

  • 1/2 cup cucumber
  • 1 tsp lime zest
  • 3 tbsp lime juice
  • 2 tsp caster sugar
  • 1 tbsp finely chopped jalapeño
  • 18 oysters
  • jalapeño slices (optional)

Steps

  1. Finely grate the cucumber into a shallow freezer-safe dish.
  2. Stir in the lime zest, lime juice, sugar, and chopped jalapeño.
  3. Spread the mixture into an even layer and freeze for 5 minutes.
  4. Scrape the frozen mixture with a fork to form icy crystals.
  5. Spoon the granita over the oysters and add jalapeño slices if desired.
