Ingredients

  • 1 can (10 oz) rotel tomatoes and green chilies
  • 1 pkg cream cheese
  • 8 flour tortillas
  • 1 cup shredded monterey jack cheese
  • 1 cup heavy cream
  • optional 1/2 cup salsa verde for a spicier version

Steps

  1. Heat the oven to 375 F.
  2. Warm the cream cheese, heavy cream, and tomatoes with green chilies in a saucepan over medium heat for 5 minutes.
  3. Spread a little sauce in a 9-by-13-inch baking dish, fill the tortillas with sauce, and roll them seam-side down.
  4. Pour the remaining sauce over the tortillas and sprinkle on the Monterey Jack cheese.
  5. Bake for 20 minutes, until the cheese melts and the center is hot.
