Steps

Whisk the egg yolks, cornstarch, sugar, and salt in a medium saucepan.
Slowly whisk in the coconut milk until smooth.
Cook over medium heat for 10 to 12 minutes, whisking constantly, until thick and bubbling.
Remove the pan from the heat and stir in the vanilla.
Divide the pudding among four dishes and cool for 20 minutes.
