6 egg yolks
1/3 cup sugar
1 lb mascarpone cheese
3 egg whites
2 cups brewed strong espresso
2 tbsp marsala wine
28 ladyfingers
1/2 cup unsweetened cocoa powder

Steps

Whisk the egg yolks and half the sugar in a heatproof bowl.
Set the bowl over a saucepan of gently simmering water and whisk for 4 to 5 minutes, until the yolks reach 160 F.
Whisk the egg whites and remaining sugar over the simmering water until they reach 160 F, then beat until firm.
Stir the mascarpone into the warm yolk mixture, then fold in the cooked egg whites.
