Steps

Line an 8-inch square pan with parchment.
Melt the dark chocolate, vegan butter, and maple syrup in a heatproof bowl over barely simmering water for 5 minutes.
Break the cookies into bite-size pieces and stir them into the chocolate mixture with the marshmallows, dried cranberries, and half the pistachios.
Press the mixture firmly into the pan and scatter the remaining pistachios and freeze-dried cranberries over the top.
Chill the rocky road for 3 hours, then cut it into pieces.
