Steps

Heat the olive oil in a Dutch oven over medium heat.
Cook the chorizo for 6 to 8 minutes, breaking it apart, until it reaches 160 F.
Stir in the garlic, thyme, smoked paprika, and bay leaf, and cook for 1 minute.
