Steps

Heat the one-third cup cream in a small saucepan until steaming.
Whisk the egg yolks in a bowl, slowly whisk in the hot cream, and return the mixture to the saucepan.
Cook over low heat, stirring constantly, until the mixture reaches 160 F.
