4 oz butter
1/2 cup yellow onion
3 cups corn
2 eggs
1 cup sour cream
2 tsp cumin
1/2 cup cornmeal
9 oz monterey jack cheese
1 can (14 oz) rotel tomatoes & chilies

Steps

Heat the oven to 375 F.
Melt the butter in a skillet over medium heat and cook the onion for 5 minutes.
Whisk the eggs, sour cream, cumin, and salt in a large bowl.
Stir in the cornmeal, corn, tomatoes and chilies, and cooked onion.
Spread the mixture in a greased 9-inch square baking dish and top with the cheese.
Bake for 20 minutes, until the center is set and the eggs are firm.
