Ingredients

  • 3 cups pecans
  • 1 cup sugar
  • 1 tbsp light corn syrup
  • 1 cup butter
  • 1/4 cup bourbon
  • 1 cup semi-sweet chocolate chips

Steps

  1. Heat the oven to 350 F and toast the pecans on a baking sheet for 8 minutes.
  2. Line a 9-by-13-inch pan with parchment or lightly coat it with cooking oil.
  3. Melt the butter in a heavy saucepan over medium heat, then stir in the sugar and corn syrup.
  4. Cook the mixture for 8 to 12 minutes, stirring often, until it reaches 300 F, then carefully stir in the bourbon.
  5. Pour the hot toffee into the pan, scatter the chocolate chips over it, and rest for 5 minutes before spreading the melted chocolate.
  6. Cool the toffee at room temperature for about 60 minutes, then break it into pieces.
