Ingredients

  • 4 slices bacon
  • 2 lb red new potatoes
  • 1/4 cup olive oil
  • 3 tbsp red or white vinegar
  • 1 bunch green onions
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 1/2 oz blue cheese
  • 1 1/2 tbsp blue cheese salad dressing (optional)

Steps

  1. Cut the potatoes into 1-inch pieces and boil them in salted water for 10 to 12 minutes, until fork-tender.
  2. Cook the bacon in a skillet over medium heat for 6 to 8 minutes, then drain and crumble it.
  3. Whisk the olive oil, vinegar, salt, pepper, and blue cheese dressing in a large bowl.
  4. Drain the potatoes and toss them with the dressing while warm.
  5. Fold in the bacon, green onions, and blue cheese, then serve warm or chill for 5 minutes.
