Ingredients
- 2 eggs
- 1 tbsp honey
- 1 cup milk
- 1/4 cup vegetable oil
- 2 1/2 bananas
- 2/3 cups white flour
- 1 1/3 cups whole wheat flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cups chopped nuts
- sugar to taste (optional)
Steps
- Heat the oven to 350 F and grease a 12-cup muffin pan with cooking oil.
- Mash the bananas in a large bowl, then whisk in the eggs, honey, milk, and vegetable oil.
- Stir in both flours, salt, baking powder, nuts, and optional sugar until just combined.
- Divide the batter among the muffin cups and bake for 20 to 24 minutes, until firm.
- Cool the muffins in the pan for 10 minutes before removing them.
