- 1 lb 80/20 ground beef
- 1/2 lb ground pork
- 2 large eggs
- 2/3 cup italian-style breadcrumbs
- 1/3 cup finely chopped fresh flat-leaf parsley (optional)
- 1/4 cup freshly grated parmesan cheese (optional)
- 3 cloves garlic
- 1 1/2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
Steps
- Heat the oven to 400 F and line a large baking sheet with foil.
- Mince the garlic and parsley, then mix them with the beef, pork, eggs, breadcrumbs, parmesan, salt, and pepper.
- Shape the mixture into 1 1/2-inch meatballs and place them on the baking sheet.
- Bake for 20 to 25 minutes, turning the meatballs halfway through.
- Check that the centers reach 160 F before removing the meatballs from the oven.
